YOU'LL NEED: Small omelet pan (to confine eggs & oil) Medium heat Eggs and vegetable oil 1. Completely HEAT UP pan on medium heat. (5 min) 2. Add ENOUGH OIL to mostly cover the bottom. Let it get HOT (1-2 min) 3. COOK eggs. RESIST stirring for 10 seconds. Stir gently until done, and they should slide off the pan. *START OVER if the eggs don't start cooking like crazy from the beginning. When the oil isn't hot enough, the eggs will stick to the pan and you'll be stuck with a tough cleanup job. Eggs should cook on the hot oil, not on the pan.
